Watermelon + Grilled Fruit Skewers

recipe and images from OXO

Grilled watermelon might sound weird, but we promise it’ll be the star of your cookout. Simply slice a medium-sized watermelon and brush both sides with olive oil, then place the slices on the grill over medium heat. You’ll know they’re ready when grill marks appear – about two to three minutes per side. Remove the watermelon from the grill and sprinkle with sea salt and pepper, then cut it into cubes and sprinkle with feta (to taste, although we prefer to be a little heavy-handed when it comes to cheese) for a sweet and savory summer salad.

We also like to make watermelon skewers. We use a Melon Baller for perfect, uniform balls. Alternate between a watermelon ball and cube of halloumi for grilling.
