Featuring a pantented design, these fully forged cleavers from Cangshan; one for meat, one for vegetables, are made from German Steel X50CrMoV15 for incredible durability, stain resistance, and exceptional edge retention. The blades measure 58 +/- 2 on the Rockwell Hardness Scale, and are hand-sharpened to a razor-sharp 16-degree edge. Both cleavers are NSF certified for commercial use. A vegetable cleaver is great for push cuts, slicing and dicing vegetables, mincing herbs, and cutting fruit or cheese.
