A traditional method of bread-making includes allowing a loaf to rise in a banneton, or brotform. A banneton is made of natural rattan and, as the bread rises, it gives the loaf-to-be a shape, as well as wicks moisture from the outside, leading to a golden-brown crust. When the dough has risen, turn it out from the banneton to bake, and you'll get a wonderful loaf encircled with parallel rings, and a delightful crust. This brotform measures 15" x 5.5" and is ideal for a 3-ib. loaf.
