Can a knife be as pleasing to the eye and as satisfying to the touch as it is unsurpassed as a cutting tool? In the case of new Premier cutlery from Shun, the answer is an emphatic "yes".

Like the now-legendary Shun Classic cutlery, Shun Premier knives start with Shun's proprietary VG-10 "super steel", an alloy of carbon, chromium, cobalt, manganese, molybdenum, silicon, and vanadium that provides the cutting edge of each knife. VG-10 has a Rockwell hardness rating of 61 and because of its strength, the blade can be ground to an extreme 16 degree angle, narrower and sharper than the 22 degree angle of most traditional European knives. This means Shun Premier knives start out sharper and stay sharper longer than European knives. To protect the VG-10 edge, every core is clad on each side with 16 layers of bonded steel, creating a 33-layer blade, a core of VG-10 cutting steel, and 32 layers of stainless steel.

Where these two steels meet on each Premier knife, a wavy line called hamon is created, similar to line formed on traditional samurai swords tempered using a clay-baking technique. The striking hammered finish ("Tsuchime" in Japanese), besides making each knife unique in appearance, creates a series of hollow-ground cavities, lowering cutting resistance as the blade cuts through food. The dramatic blades of Premier cutlery are complemented by the high-gloss, walnut Pakkawood handles that are carefully shaped to nestle in the hand and provide a secure and comfortable grip.
