In Seki City, Japan, home of generations of samurai sword artisans, the latest advances in metallurgy are combined with traditional craftsmanship to create Shun knives. Each blade is made of 33 layers of bonded steel, a special VG-10 "super-steel" core that forms the cutting edge, encased on each side by 16 layers of stainless steel. This unique process creates a blade that is thinner, with a steeper blade angle that takes and holds a sharper edge; and harder, with a Rockwell rating of 61. The "D"-shaped synthetic handle conforms perfectly to the curve of the hand (left-handed knives available to order), with an asymmetrical bolster that helps create the ideal balance point.
