First of all, Scanpan CTX is made (in Denmark) of 5 layers of clad metals, stainless-steel on the outside, aluminum on the inside. This combination gives you the top-notch heat conductivity of aluminum, plus the durability and brilliant shine of stainless steel. Not only that, the steel content makes Scanpan CTX ideal for use on induction cooktops, the first non-stick cookware that delivers great performance on electric, gas and induction stoves. The ergonomic handles are made of solid, cast stainless steel and, on the pieces with lids, the lids are tempered, oven-safe glass framed in stainless steel. You can see what's cooking without lifting the lid.
Then there's Scanpan's patented non-stick surface, a mulitple-step process that's certified completely PFOA free. First, a ceramic-titanium compound is fired onto each pan at a temperature of 26,000F, at a speed of twice the speed of sound. The compound momentarily liquifies, permanently embedding itself in the surface of the pan. Next, an exclusive non-stick compound is bonded to the new surface, creating a lifetime non-stick cooking surface that will not peel and will not interact with food. Metal utensils are completely to use with Scanpan's non-stick surface, and Scanpan CTX pans are totally dishwasher safe. It's even safe in the oven up to 500F.
