When you tighten the big knob on the top, you adjust and lock those grippers, with their metal teeth, against the jar lid; then you just hold the jar securely and push counter-clockwise on the handle. The grippers stay locked and don't let go until the lid is loose. Turn the big knob on top to loosen the gripper teeth and you're done.
